Sweet Potato Hash Browns

"You had me at Hash Browns!"


1 sweet potato: peeled and grated
1-2 TBSP avocado oil
Optional spices: Cumin, turmeric, ginger, cinnamon or all of them.


Peel and wash a whole sweet potato. Grate the potato with a large hole cheese grater.
Put the shavings into a bowl and drizzle 1-2 TBSP of avocado oil, salt.
Heat skillet over medium heat for 1-2 min.
Spread out grated sweet potato and let cook for 20-45 seconds until it starts to toast.
IFlip over sections to toast the other side.
