Just when you thought pancakes couldn't be better!
1 large sweet potato: peeled and grated
1/4 cup of almond flour
1 dash of salt
1-2 TBSP of chia seeds (omit if you do not want it sweet.)
2-3 TBSP of avocado or coconut oil
Prepare the ingredients above and put them into a mixing bowl.
Toss the ingredients together until they're all sticking together.
Take about 1/3 cups of the mix and press them together tightly into spheres and then press them slightly into into a patties. They will appear small.
Now place the patty into a skillet and let it cook for 2-5 min until toasted.
If the heat is too high it will burn, so keep it low or medium low. This will take a bit longer to toast but will cook throughout.
Then flip and let cook for 4-5 min on the opposite side.
Remove from heat, let cool, and enjoy - or freeze them, as they also freeze well!
